ALMA, from the field to the bottle: the only distillery in Italy that grows and distills rum and gin from its own sugar cane.
ALMA takes its name from the goddess Ibla, an ancient Greek deity who protected nature. MATER is the energy of man, it is the sacredness of the soil, of the wind that blows through the hills, it is the heat of the sun and the strength of the sea of the territory of Modica, near Ragusa.
STYLISTIC
Producers, artisans and distillers. The only distillery in Italy that directly cultivates and processes sugar cane. From March to June, the canes are harvested by hand; the juice, extracted with a small mill, is mashed in the distillery and fermented for 72-96 hours at a controlled temperature. Small, powerful copper stills are used, with a 600-liter bain-marie potstill and a column with four plates. The rum is refined in steel, keeping the characteristics of the raw material intact.
