The name comes from the Old French “cohober”, which refers to the process of redistillation to concentrate the aromas, thus obtaining a pure and delicious eau-de-vie. This practice dates back to the 18th century, particularly in the Cognac region of France. Cohobé is not just a technique, but an approach that aims for continuous perfection, seeking to sublimate the whisky and discover the purest and most authentic expression of the aromas.
